Dry red wine, 100% Sangiovese grapes. This Riserva of Brunello is made with a special selection of grapes collected from our best vineyards in Montalcino. The ageing in barrel and in bottle is longer than the one for a regular Brunello, thus the wine has a deeper concentration and a wider complexity of aromas.

Vineyards Property of Fattoria dei Barbi, located in the district of Montalcino and registered for Brunello di Montalcino production. Soil: marl. Altitude: 400 mt slm. Average age: 20 years. Orientation: South East. Vine Training System: Cordone libero. Vine Stock per hectar: 5.000. Yeld per hectar: 60 ql.

The Year 2003 The perfect growth and development of the plants through the Springtime was helped by the copious and constant rain shower which guaranteed also an abundant water reserve, essential for the exceptionally hot and dry Summer.  The high temperatures and the long hours of light promoted an excellent maturation of the sugar and a first rate concentration of polyphenols. The first rain showers and a milder temperature in early September avoided the risk of stress in the plants, therefore the harvest took place regularly from the 18th of September to the 12th of October.

Vinification The Brunello 2003 shows an excellent phenolic extraction and a rich bouquet. These characteristics have been enhanced with the help of modern winemaking techniques such as the pre-fermentative cryomaceration, which consists in cooling the grapes for 48 hours at a temperature of 30°- 5° C in an environment protected by CO². The low temperature causes in the grapes a temporary freeze of their skins, with the consequent rise in volume and the breakage of the cells. This process helps the spreading of various wine components, increasing the softness, balance, complexity and colour stability. The regular alcoholic fermentation followed and lasted 16 days, gradually reaching a temperature of 29°-30°C. The wine aged in small-medium size oak barrels (5-20 hl) for the first months. Later it completed the aging in larger oak barrels, for a total period of three years.
Our Brunello Riserva is bottled at least 6 months before the release.

Chemical Analysis Alcohol 14,32% – Tot. Ac. 5,15 g/l  – Vol. Ac. 0,50 g/l – free SO² 24  mg/l – Tot. SO² 94  mg/l –  Residual sugars 1,5  g/l – Dry extracts 32,3 g/l.

Sensory Analysis Colour: lively ruby red colour with shades of garnet. Bouquet: The classic entry on the nose has depth as well as faintly jammy briary fruit, cherry and morello cherry. Its complex nose is enriched by hues of cedar wood and sweet tobacco. Taste. The taste  is warm, powerful, tannic and smooth. The wine has a very good structure and excellent persistence.

Food Combinations Wine for important occasions, matches roast or braised meat, game and mature cheeses.

Serving Temperature Serve at a temperature of 18°C.

Capacity of ageing 20-80 years.

Conservation and storage Keep the bottle horizontally in a dark place at a temperature of 12°-14°C.
